Did someone say brunch? These pancakes are perfect for a lazy Sunday and to satisfy that sweet tooth.

Ingredients:
For the Pancakes:
- 200g self-raising flour
- 1 1/2 tbsp baking powder
- 1 tbsp granulated sugar
- 2 x large eggs
- 25g butter (melted)
- 200ml milk
- 2 x tbsp smooth peanut butter
For the sauce:
- 200g frozen strawberries
- 4 x tbsp sugar
To serve (per stack):
- 2 x tbsp vanilla yogurt
- 1 tsp x peanut butter
Method:
- For the batter, combine the dry ingredients in a large mixing bowl. Create a well in the centre and add the eggs, melted butter, milk and peanut butter. Whisk until smooth and frothy. Put to the side.
- Heat the strawberries, sugar and 100ml of water in a saucepan over a medium heat. Boil for 15-20 mins, until it reduces and the strawberries become a sauce.
- Heat a tbsp vegetable oil in a pan, taking a ladle of the pancake mix, pop into a frying pan over a medium heat. Cook on each side for around 2 and a half minutes, until it’s golden brown and air bubbles are forming.
- Stack those pancakes! And top with vanilla yogurt, your strawberry sauce and 1 tsp of peanut butter.
