Ginger Florentines

The perfect edible gift!

Prep & cook time: 20 mins

Ingredients:

  • 50g butter
  • 50g light brown sugar
  • 50g golden syrup
  • 50g self raising flour
  • 35 flaked almonds
  • 50g chopped nuts
  • 50g glacé ginger
  • 1 orange, zest
  • 50g maschino cherries, chopped
  • 150g dark chocolate

Method:

  1. Preheat the oven to 180 degrees. Line two baking trays with baking paper. Into a saucepan add the butter, sugar and golden syrup until melted. Remove from the heat and whisk in the flour until smooth. Add in the almonds, chopped nuts, ginger, orange zest and cherries. 
  2. Take a tablespoon of the mixture and place onto the lined baking tray, make sure you leave enough space as they will spread in the oven – you should get about 8 tbsp full. Pop into the oven for 10 mins until golden. Leave on the baking tray for 5-10 mins to cool slightly, then gently lift onto a cooling rack. Once completely cool, flip over.
  3. Melt the chocolate over a Bain Marie. Turn the florentines over on the wire rack. Take a tbsp of chocolate, add to the centre of the florentine and work your way out spreading the chocolate to make sure the back is fully covered and goes to the edges. Once the chocolate has almost cooled, run a fork through it to create some fun patterns. Leave to cool fully and store in an airtight container. They’re the perfect Christmas gift!
