Happy Pancake Day! Although I love a bit of tradition and will be having lemon and sugar pancakes this evening, you’ve sometimes got to break the mould.

Makes 8 pancakes
Prep and cook time: 45 mins
Ingredients:
For the pancakes:
- 200g Self Raising Flour
- 1 1/2 tsp Baking Powder
- 1 tbsp Granulated Sugar
- 3 Eggs
- 25g Butter, melted
- 200ml Milk
- 1 tsp vegetable oil
For the sauce:
Per person
- 100g Frozen Winter Berries
- 1 tbsp Granulated Sugar
To serve:
Per person
- 2 tbsp Coconut Yogurt
Method:
- In a large bowl, combine all of the dry ingredients, the flour, baking powder and sugar
- Melt the butter in the microwave for 20 seconds
- Make a well in the centre of the dry ingredients and add the eggs, melted butter and milk
- Whisk the ingredients together until smooth
- Let the batter rest by making the winter berry sauce. In a saucepan add the berries, a splash of water (around 20ml per portion) and the sugar. Let the berries cook down a little and the sauce to get sticky.
- In a non stick frying pan, heat the oil over a medium heat. Using a ladle, spoon the pancake mix into the pan. (for best results do only one or two pancakes at a time) Fry for two mins on either side or until golden brown.
- Stack the pancakes, dollop the coconut yogurt on and drizzle the winter berries over the top
- Time to enjoy them!
