Three Ways to Pimp Your Mac & Cheese!

We all know how comforting mac and cheese can be. Sometimes we just need a little bit of extra flavour that packs a punch. I have three flavours to do just that!

Bacon, Leek & Truffle

Ingredients:

  • 1 tsp truffle oil
  • 200g Bacon lardons
  • 1 leek, chopped
  • 1 slice of bread (blitzed into breadcrumbs)

Method:

  1. Fry the bacon lardons in oil until crispy over a high-medium heat.
  2. Add in the sliced leek, stir for three minutes until the leeks begin to soften.
  3. Stir in the breadcrumbs and fry for one minute. Then add on top of your mac & cheese.

Chorizo & Sundried Tomato

Ingredients:

  • 80g chorizo, diced
  • 5 sundried tomatoes, chopped
  • 1 slice of bread (blitzed into breadcrumbs)

Method:

  1. Taking a tbsp of the tomato oil, pop in a pan and fry the diced chorizo for around two minutes over a high heat.
  2. Add in the chopped sundried tomatoes, as well as the breadcrumbs and fry for one minute. They will soak up the tomato-ey, chorizo-ey oil!
  3. Now top your mac and cheese.

Mushroom & red onion

Ingredients:

  • 100g Chestnut mushrooms, sliced
  • 1 tsp oil
  • 1 red onion, sliced

Method:

  1. Fry the mushrooms in a dry pan, be sure not to move them around so they go crispy rather than slimey.
  2. Once nicely browned, add the oil and red onion and fry for 5 mins until the onion is soft.
  3. Top the mac & cheese.
