Ingredients:
- 15 cherry tomatoes, halved
- 1 tsp garlic oil
- 1/4 tsp dried thyme
- Salt & pepper
- 25g feta
- 1 tbsp natural yogurt
- 2 slices of sourdough bread
- 1 tsp butter
- 1 tbsp pumpkin seeds
- Fresh dill
Method:
- Add the tomatoes to a bowl, with 1/2 tsp garlic oil, a big pinch of salt and pepper and dried thyme.
- In another bowl, crumble the feta and add the natural yogurt. Using a fork, whip the mixture together. If you want a totally smooth paste, then use a blender.
- Drizzle the bread with garlic oil before frying in a pan over a medium heat. This should take a 1-2 mins each side, or until golden. Add a knob of butter just before it’s finished.
- It’s time to serve up! Spread the whipped feta over the bread, top with the tomatoes, sprinkle with pumpkin seeds and top with some fresh dill. Enjoy!
